Method
- Heat the olive oil in a pan. Fry the pancetta until it begins to crisp. Add the onions and cook until translucent. Transfer the onions and pancetta to a large pan.
- Add the celery, carrots and oregano and sautƩ. Remove from the heat. Add to the large pan with the onions and pancetta.
- Return the pan to the heat. Add the mince, garlic and the nutmeg. Cook until the mince is browned.
- To the large pan add the browned mince, passata, chopped tomatoes, tomato purƩe, stock and bay leaves. Bring to the boil, mix through, reduce the heat and leave to simmer for 20-30 minutes.
- To thicken the sauce, either bring back to the boil, simmer and reduce, or stir in 1 tbsp of cornflour. Remove the bay leaves before serving.Ā
- For a baby not able for texture, blend the mince and serve with small pasta shapes.
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
9-12 months ā Minced and finely chopped.
