Pinwheels can be prepared ahead of time either cooked through and then served cold or cooked on the morning of school and added to a warm food flask. They are the perfect alternative to a sandwich. Switch it up using different cheeses (just make sure they melt like a Cheddar).
Makes: 24 pinwheels
Ingredients:
1 sheet Puff Pastry (thawed)
1 tbsp Dijon mustard *optional
6 slices of ham
80g Cheddar, grated
Method:
- Preheat the oven to 190c. Line a baking sheet with parchment paper.
- Lay the puff pastry out flat and lightly spread a layer of mustard. Add the ham and cheese. Roll into a log and cut into slices. At this point if you have time you can cover with cling film and leave in the fridge for about half an hour.
- Place your cut pinwheels on the baking sheet and bake for 15-18 minutes until the puff pastry becomes golden brown. Serve hot or cold in your child’s lunchbox.
Tip: freeze portions uncooked and then cook from frozen on the morning of school. Add 10 minutes to the cooking time.
