Cupcakes are great to make for a school cake sale or any celebration and you can adjust the colour of the buttercream icing and cake decorations to suit the occasion. They are one of my favourites and your children will love getting involved in making these!
Makes: 12 Cupcakes
Ingredients:110g butter, softened
150g caster sugar
2 eggs
1 1/2 tsp vanilla extract
190g plain flour
1 1/2 tsp baking powder
1 1/2 tsp salt
115g Greek yoghurt
To decorate:
125g butter, softened
225g icing sugar
A few drops of vanilla extract

Method:
- Preheat the oven to 180°C. Grease a muffin or cupcake tin or line with paper cases.
- Beat the butter and sugar together until light and fluffy. Gradually beat in the eggs and the vanilla extract.
- Gently fold in the flour, baking powder, salt and yoghurt with a spoon and combine well.
- Place spoonfuls of the mixture into the cupcake tin and bake for 20 minutes until a knife inserted into the centre comes out clean.
- Remove from the oven and leave to cool on a wire tray.
- Make buttercream by beating the butter, icing sugar and vanilla extract together until smooth and creamy.
- Pipe or swirl icing onto each cupcake then top with cake decorations.
