Easter Bunny Snack

Easter Bunny Snack
We were delighted to be asked back on the Ireland Am Cooking slot and this time we were joined by my daughter Ashleigh. On the day we prepared a healthy Easter Bunny Snack you can easily do with your kids and is a perfect finger food snack for your weaning baby.

Cook time: No cooking required
Makes: 4 Child portions

Ingredients
3 Slices Wholemeal bread
Apple
Blueberries
Rasins
Celery
Red Pepper
Dried apricots
Strawberries
Cream Cheese

Utensils:
Flower circle shaped cutters, large and small
Culinary scissors

Method
  1. Cut out the bunny face with the large cutter.
  2. Cut out the ears and body using the scissors.
  3. Cut out the tail (using a small cutter).
  4. Spread the cream cheese over the bread.
  5. Cut the whiskers out of the celery and make them long and thin.
  6. Halve a strawberry, slice that half nice and thin and cut it into a little strawberry for the nose.
  7. Halve a blueberry for the eyes.
  8. Slice some red pepper, nice and thin in the same (but smaller) shape of the ears. Finish flesh side up, for the insides of the bunny ears.
  9. Slice some apple and place skin side up for the bunny’s belly.
  10. Cut triangles from dried apricot to make a bow-tie, using a dried blueberry for the knot.
  11. Cut out 2 small rectangles from the apple for the bunny teeth.
  12. Assemble on your child’s favourite plate and enjoy!
