As the weather warms up and the days get longer, it's the perfect time to fire up the grill or BBQ for some outdoor cooking. My Grilled Lemon and Herb Chicken is an ideal recipe for those summer gatherings, combining the fresh flavours of lemon and herbs with tender chicken breasts.
This dish is not only quick and easy to prepare but also incredibly versatile, making it a great addition to any summer meal. Plus, it's kid-friendly and sure to be a favourite among the little ones, making family dinners a breeze. For added fun, let the kids help with marinating the chicken – it's a great way to get them involved in cooking and excited about healthy eating.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 lemon
- 3 cloves of garlic, minced
- 2 tablespoons of fresh chopped herbs (such as rosemary, thyme, and parsley)
- 2 tablespoons of olive oil
- Salt and black pepper to taste
Instructions:
- Preheat your grill to medium-high heat.
- Using a rolling pin, pound the chicken breasts between sheets of cling film until thin.
- In a small bowl, whisk together the juice of one lemon, minced garlic, chopped herbs, olive oil, salt, and black pepper to create a marinade.Place the chicken breasts in a shallow dish or resealable plastic bag and pour the
- marinade over them, ensuring they are evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavour.
- Once the chicken has marinated, remove it from the refrigerator and let it come to room temperature for about 10 minutes.
- Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and have nice grill marks.
- Remove the chicken from the grill and let the chicken rest for a few minutes before serving.
This dish pairs well with a fresh green salad, grilled vegetables, or your favourite summer side dishes. Enjoy your outdoor meal!
