Cauliflower Macaroni & Cheese

This Mac and Cheese recipe from my Lunchbox Made Easy book appears weekly in our household. I like to cook the entire bag of macaroni so that I have enough leftover for the school lunch the next day. I have converted many a child with a cauliflower aversion to love this dish. It's light and cheesy and feel free to add extra vegetables, slices of cooked chicken or some delicious cooked prawns!

Makes: 5 Adult Portions

Ingredients:

500g dried macaroni
1 small head of cauliflower, finely chopped
200g Cheddar cheese, grated
100g Parmesan cheese, grated
200ml crème fraiche
1 tsp dried parsley
Tip: For a more crunchy version, top with breadcrumbs and place under the grill for 10 minutes

 

Method:
1. Add the macaroni and cauliflower to salted boiling water and cook according to the macaroni packet instructions.

2. Mix the grated cheeses, crème fraiche and parsley in a heatproof glass or metal bowl.

3. On a hob, boil water in a small saucepan. Place the bowl with the cheese mixture over the boiling water and allow the cheese to melt. Keep the temperature low so that it does not boil over and keep stirring until the cheese has melted.

4. Drain the macaroni and cauliflower and reserve some of the cooking liquid.

5. In a large dish add the macaroni, cauliflower and cheese and mix through. At this stage you can add some of cooking water to thin it out, if needed.

6. Place it in the centre of the table and allow your child to take their portion. I promise you they will be back for seconds!

7. Store in the fridge for up to 3 days and heat through before placing it into your child's food flask.

For baby 6m+: Avoid blending pasta and instead offer as finger food.
