This easy zoodle recipe with homemade tomato sauce is delicious and your kids will really enjoy them.
Cook time:Â 30 minutes
Makes: 4 Adults portions
Ingredients
4 tbsp olive oilÂ
2 onions, finely chopped
2 cloves of garlic minced
4 tbsp dried oregano
1 tbsp paprika
Method

Sprialise the courgettes or use a peeler to make ribbons, and set aside. For fussy eaters who might reject it,peel the green skin.

Heat 2 tbsp of olive oil in a saucepan. Fry the onions until translucent. Add the garlic and cook for 2-3 minutes further.

Add the dried herbs and spices to the pan, followed by the passata. Bring the mixture to the boil, before simmering for 15-20 minutes, uncovered.

Mix in the basil and leave the sauce to sit.

In a large frying pan, add the remainder of the olive oil and cook the courgettes for about 5 minutes, until it has cooked through but is not soggy. Add the tomato sauce, and pasta if using, and coat well. Top with Parmesan cheese.Â

If your baby is not able for texture, blend the vegetables and tomato sauce, before adding the pasta.Â
