When it comes time for my family to enjoy a nice treat like cake, I try to make it as healthy as possible. Not only are these child-friendly mug cakes refined-sugar free, they are so easy and quick to make. You can even cook them in the microwave! I love getting my girls involved in the process so they can create a positive association with the kitchen and preparing food.
Although they are more healthy than a regular cake, these should still be served only on special occasions so your children don't get accustomed to having treats every day.
Makes: 1 mini mug cake
Ingredients
Double chocolate
4 tbsp self-raising flour
1 tbsp maple syrup
2 tbsp cocoa
1 egg
3 tbsp full fat milk
3 tbsp vegetable oil
1/2 tsp vanilla extract
1 tbsp chocolate chips
Blueberry vanilla
4 tbsp self-raising flour
1 tbsp maple syrup

Handful of fresh blueberries
Method
- If baking in the oven, preheat the oven to 180 °C.
- In a large mug or mini ramekin dish, place all the dry ingredients and mix well with a spoon. Use the spoon to grind all of the cocoa and flour against the side of the mug so there are no lumps.
- Add the egg and beat it a little on top of the dry ingredients to break the yolk.
- Add the oil, milk and vanilla and mix until well combined.
- Stir in the chocolate chips or blueberries. Put the mug into the microwave on high for 3 minutes or place in the oven for 15-25 minutes. Let cool slightly before serving.

6 months+ - Introduce as a finger food for baby to pick up and self feed.
