Muffins are such a wonderfully versatile snack. They are really easy to pack and are so fun to make with your children! This recipe is one of my favourites to pop in a lunch set for my girls' school lunches. The muffins are naturally sweet, yet are actually refined sugar-free and full of healthy fruit! If your little ones are anything like mine, I can promise you that they will be delighted to see this yummy treat in their lunch box. The Mummy Cooks Lunch Set contains twenty pots in four different sizes, all the containers you will need for the school week!
Cook time:Â 30-35 minutes
Makes:Â 12 Muffins
Ingredients:
2 red apples, peeled & grated
150g butter
2 bananas
180g wholemeal flour
4 tsp baking powder
2 eggs, whisked
 Method:
- Preheat the oven to 180°c. Grease your muffin tin or use a silicone muffin tray.
- Put the grated apple and butter in a saucepan and cook on a medium to low heat for 5 minutes until soft. Peel and mash the banana.
- Add the apple mixture and mashed banana to a bowl and mix in the flour, baking powder and eggs.
- Spoon the mixture into the muffin tin and bake for 20 minutes, or until risen and firm to the touch.
- Allow to cool in the tin for a few minutes. Transfer to a wire rack and cool completely before serving.
- Freeze any leftovers for future use.
