This One Pot Fish Curry recipe is destined to become a family favourite! Not only because you can create this wholesome dinner in just 20 minutes, but the delicate curry flavour makes it suitable for the whole family and it's super simple to adapt for baby. The garlic and curry spices used in this dish will also help to ward off colds too, making this mealtime recipe perfect for wet and windy days!
Makes: 4Ā x Adult
Cook time: 15-20 minutes
1 tbsp sunflower oil
1 onion, finely chopped
1 garlic clove, crushed
1 tsp turmeric
1 tsp garam masala
400ml tin coconut milk
400g a mix of cod, salmon and smoked haddock
200g frozen peas
Salt* and Pepper, to taste
Yogurt and rice, to serve
*Omit salt for baby
Method
- Heat the oil in a large frying pan over a medium heat. Fry the onion for 3 minutes, until soft.Ā
- Mix in the garlic and spices and cook for a further minute. Stir and cook for another minute, adding a splash of water to prevent them sticking.Ā
- Pour in the coconut milk and bring the mixture to the boil. Cover and simmer for 10 minutes.Ā
- Add in the fish mix and peas and cook for about 3 minutes until the fish is starting to flake. Season and serve with some rice.Ā
How to Freeze:
Allow the dish to cool, portion into your pots, transfer to the fridge and then to the freezer.Ā
How to adapt for baby
6m+ - Getting used to new textures:
Always check fish before blended. Using your thumb and finger check for any bones then blend the curry to your desired consistency. Add mashed potato for a little texture or rice for more texture. Freeze curry without the rice.
8m+ - As a textured purƩe
Again check for any bones then offer fish flaked into the curry with some mashed potato or rice.Ā
