Makes: 450g
Ingredients:
1 wholemeal tortilla
1 tsp extra virgin olive oil
4 tomatoes, roughly chopped
1 tbsp coriander, finely chopped
½ red onion, chopped
1 lime, juiced
Salt to taste (omit for a baby)
- Cut the tortilla in half and then into four wedges or six depending on the size. Heat the oil in a frying pan and fry the wedges in batches for about 2 minutes on each side until golden and crisp. Reduce the frying time for a baby just starting out with finger foods.
- To make the salsa place all of the ingredients in a blender or food processor and blend to your desired consistency. Season to taste.
- Pack in your child's lunchbox in a 90ml/3oz portion pot and serve with your toasted tortilla, or as a finger food for a baby making sure your baby is able for the crispy tortilla.
Weaning and Storage
6 months+ - Introduce as a finger food your baby to pick up and self feed.
