Heat the olive oil and spices in a small frying pan over a low heat.Â

When the oil begins to infuse, remove from the heat. Add the sultanas and leave to stand for a few minutes, until they have softened.

Cook the couscous according its packet instructions.Â

In a bowl, mix the couscous, peppers, and oil mixture until well combined.
