There is nothing better than a warming bowl of soup on a cold day.
This delicious minestrone soup is great for weaning babies (who can manage lumps) or children as the days get colder. You can use any kind of small pasta shapes; we used Stellette star pasta shapes, which are used in soups.
This dish is also perfect for freezing so make sure to make a batch and freeze in your Toddler PotsĀ for future use. Cut up some fingers of toast to serve.
Cook time:Ā 40 minutes
Makes:Ā 4 Adults portions
Ingredients
1 tbsp olive oil
2 onions, finely chopped
2 red peppers, finely chopped
1 courgette, grated
2 carrots, peeled and grated
700ml low salt vegetable stock
200g tin chopped tomatoes
120g stellette star pastaĀ
MethodĀ
- Heat the olive oil in a large saucepan over a low heat. Cook the onions and peppers for 6-7 minutes, until soft.
- Add the courgette, carrots, stock and tomatoes.Ā
- Bring to the boil. Cover and simmer for 20 minutes.
- At this point, if you feel your baby might not accept the lumps, you can blend the vegetables.
- Add in pasta. Cook for a further 10 minutes, until the pasta is soft.
- Serve the soup immediately or store for future use.
Weaning and Storage
6-7 months - Smooth and slightly thicker puree, no lumps
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
9-12 months ā Minced and finely chopped.
