This is just the thing to spice up your child's lunchbox! If your child doesn't enjoy vegetables in their sandwiches, spreads are the perfect healthy alternative. I always encourage my girls to add a vegetable to their sandwiches and they frequently choose a spread. This is also great as a dip with some chopped vegetables or bread sticks. Just pop the spread in yourĀ portion potsĀ and you're ready to go!

Makes:Ā 2 portions
Ingredients:
3 carrots, chopped
2 tbsp extra virgin olive oil
2 cloves of garlic, minced
1 1/2 tsp ground cumin
1 tsp ground cinnamon
1 1/2 tsp ground coriander
1/2 tsp chilli powder
400g tin butter beans, drained and rinsed
Juice of 1 lemon
Salt and pepper
Method:
ļ»æ1.Ā Steam the carrots until tender.
2. Heat the olive oil in a saucepan over a medium to low heat and sautƩ the garlic and spices for 1 minute.
3. Add in the beans and lemon juice and some water. Increase the heat to medium and cook for a further minute.
4. Stir gently and remove from the heat. Place in a blender or food processor and blend to your desired consistency. Add a little extra water if needed and season to taste.
