These peanut butter banana oatmeal cookies are delicious, quick and easy to make and they have all the key nutrients for a breastfeeding parent to promote healthy lactation! Bananas also help with hunger pangs and sugar cravings while breastfeeding and peanut butter provides lots of proteins and healthy fats.
These healthy cookies are the perfect pick-me-up and require only 4 ingredients!Â
Cook Time: 10 minutes
Makes: 16-20 cookies
Ingredients:
300g (2 cups) oatmeal rolled oatsÂ
3 large overripe bananas, mashed
75g (1/2 cup) peanut butterÂ
80g (1/4 cup) chocolate chips (optional)
Method:
- Preheat your oven to 175°C. Then get your baking tray and line it with baking paper or parchment paper, set asideÂ
- Place all ingredients in a large mixing bowl and mix until well combined.Â
- Wet your hands and form the mixture into balls, using about a tablespoon-sized amount for each cookie. Place each ball on the baking tray and press each ball into a cookie shape using your palm.
- Bake for 10-12 minutes, until lightly golden around the edges. Let cool before serving.
Store in an airtight container for up to a week. To freeze simply freeze the dough before baking then cook from frozen adding 10 minutes onto the cooking time.
