This is a lovely simple recipe that allows you to cook the butternut squash without having to peel it! Squash is a wonderful first food for your baby and is high in vitamins and calcium. You can serve this as a finger food by chopping into bite size pieces or simply pureeing it down to your desired consistency and serve to your weaning baby.
Cook time: 40 minutes
Makes: 9 x 60ml / 2oz
Ingredients
1 butternut squash
2 Red apples
Pinch of cinnamon
Method
- Preheat the oven to 180°C.
- Prepare your butternut squash by cutting it in half and scooping out the seeds.
- Place the butternut squash halves face up on a roasting tray.
- Peel and cube your apples and place inside the butternut squash where the seeds where. Sprinkle with cinnamon.
- Roast in oven for 40 minutes or until the skin puckers and the flesh feels soft.
- Scoop out the squash and apples, and blend as needed, adding water to thin if required. You may also chop or dice and serve them up as a finger food meal.
- Store portions in your weaning pots and freeze extras for future use.
*This recipe is also nice served with brown rice.
Weaning and Storage
4-6 months – Blended to Runny Puree
6-7 months - Smooth and slightly thicker puree, no lumps
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
9-12 months – Minced and finely chopped.
