Grapefruit & avocado pair perfectly together, the citrus from the grapefruit works in perfect harmony with the rich creamy nature of the avocado. It's super simple to make and your family will love it, including your weaning baby! It's the perfect refreshing side for seafood like grilled salmon or prawns.
Makes: 4 adult servings
Ingredients2 ruby grapefruit
1 ripe avocado
200g iceberg lettuce, cut into strips
1 tbsp sherry vinegar
60ml olive oil
Black pepper
Method
- Slice and cut the grapefruit into large wedges, removing any white husk. Reserve any juice.
- Cut the avocado into wedges (large enough for baby to hold). Place in a bowl with the lettuce and grapefruit segments.
- Put 1 tbsp of the reserved grapefruit juice in a small jar with a lid. Add the vinegar, olive oil, salt and pepper if using and shake it up.
- Pour the dressing over the salad and toss it gently.
Adapt for baby:
6 months+: Your baby is not likely to chew or swallow the lettuce at this early stage. Offer the ticker firmer leaf stems that grow from the head’s core.
9 - 12 months old: Offer chopped or finely shredded
