Your baby turning one is an exciting time and it's often tempting to get them a sugary cake. After avoiding foods high in sugar when weaning your tot, it's important to continue a healthy food regime. The last thing you want is your little one having an energy spike followed by a crash on their big day. Instead, celebrate your baby's first birthday with this healthy, sugar free smash cake recipe just for them. Don't be afraid to let them get stuck in and messy on their big day!

Ingredients
Cake
4-5 ripe bananas, peeled
2 small apples, stewed and purΓ©ed
3 tsp vanilla extract
300g wholemeal flour
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
Icing
230g cream cheese
2 tsp vanilla extract
50g raisins
Method
- Preheat the oven to 180Β°C. Line a medium sized square or number one cake tin and set aside. Cover the raisins in 130ml of warm water for 30 minutes.
- In a mixing bowl mash the bananas. Add the vanilla extract and apple purΓ©e and mix well. In a separate bowl, mix the flour, baking powder, cinnamon, and nutmeg.
- Fold the wet ingredients into the dry ingredients.
- Spread the batter evenly into the tin then bake for 30 minutes, until golden and cooked through. Once cooked, remove from the oven and leave to cool on a wire rack.
- For the icing: Remove the raisins from the juice and discard. Keep the syrup that forms. In a bowl, whisk the cream cheese, raisin juice and vanilla extract, until smooth and creamy.
- Decorate as desired with your favourite toppings. I love adding fruits such as blueberries, strawberries and raspberries.
Colouring
If you fancy adding some colour to the cake or icing, we suggest using the following natural methods to get your desired colours. With any fruit or vegetables you can stew and then strain them to obtain a concentrated liquid which will provide colouring:
Red β Beetroot, pomegranate or cranberries
Pink β Raspberries, strawberries, cherries, hibiscus or rose
Orange β Carrot juice
Yellow β Turmeric*
Green β Spinach puree (or other leafy greens), chlorella, liquid chlorophyll
*Only add around ΒΌ teaspoon to avoid an overpowering taste.
Weaning and Storage
This is a low sugar alternative cake. Under 1 year offer small amount as a finger food.
