Irish Champ (or spring onion mash) is a beautiful traditional Irish side dish which is easy to make and it's also a great way to use up any fresh or leftover potatoes.Ā
Irish champ is a great alternative to mashed potatoes. It is creamy (the perfect texture for weaning babies!) and the spring onion adds a delicious flavour while also adding great colour to the dish. Your whole family will find this side dish delicious!
Floury potatoes work best for this dish. Any leftovers can be stored in the fridge for up to 3 days in your Mummy Cooks portion pots.
Makes 4-6 adult servings
Ingredients
1kg floury potatoes
2 tbsp unsalted butter
80ml full-fat milk
60lm creamĀ
3 spring onions, finely slicedĀ
Method
- Peel the potatoes and cut them into large chunks. Steam or boil the potatoes for 12 minutes until they are tender, drain the water.Ā
- Add the butter, milk and cream, and mash the potato until smooth and lump-free. Stir in the chopped onion, season to taste and serve.Ā
Weaning and storage
6 months+ add the onion at the cooking stage for about 4 minutes towards the end. Mash into the potato mixture. Donāt blend
8 months+ or when baby is able for texture. Offer as it is.Ā
