This tasty and delicious pistachio pesto recipe is great if you are feeling a bit adventurous. It's perfect for any summer picnic and a great way to enjoy pesto with a twist.

This pistachio pesto is so versatile. Chop up some vegetable sticks and enjoy this as a healthy dip, as a finger food dip for your weaning baby or stir through some pasta for a delicious meal!

Cook time: No cooking required
Makes: 4 Adult portions

Ingredients
50g pistachios
50g mint
1 clove of garlic
35g Parmesan,  grated
100ml extra virgin olive oil
Squeeze of lemon juice

Method
  1. Place all of the ingredients into a blender or food processor.
  2. Blend on high until combined.
  3. Serve with chopped vegetables or stir through pasta.
Weaning and Storage
6 months+ - Use as a dip for finger foods such as chopped vegetables or large pasta shapes
