The combination of sweetcorn, courgette and cheese makes this a delicious finger food meal for your baby, and indeed the whole family! They are slightly crispy on the outside and bursting with fresh familiar flavour. These pair really well with homemade tomato sauce.

Makes: 8 fritters
Ingredients:
100g tin of sweetcorn, unsweetened & drained30g courgette, grated
1 spring onion, finely chopped
150g ricotta cheese
1 egg, beaten
3 tbsp plain flour
½ tsp baking powder
2 tbsp milk
20g Parmesan cheese, grated
Olive oil
Method:

Mix the vegetables along with the other ingredients into a bowl. If your baby isn’t able for texture you can blend the sweetcorn before adding it to the mix.

Add the oil to a large pan over medium heat.

For each fritter, pour a heaped tablespoon of the mixture into the pan and cook for about 2 minutes. When you see bubbles rising to the top, use a spatula to flip over and cook on the other side for a further minute.
