Nut-Free Granola

 

 

Granola is such a lovely breakfast idea that I always keep in my cupboard and it's also a nutritious lunch box addition. With crunchy seeds, cinnamon and honey or maple syrup for sweetness, my delicious nut-free granola is super healthy and simple to make. Many schools have put a ban on nuts altogether, which is why my nut-free version is the perfect lunchtime snack for children. Pumpkin and sunflower seeds are loaded with nutrients and are a great source of protein giving a mild nutty taste. The toasted oats are full of fibre. If your child isn't a fan of yoghurt on it's own, a top tip is to add this sweet mixture to it and they will love the added crunchy texture. Pack it in your lunch set as a healthy treat for school. The Mummy Cooks Lunch Set contains twenty pots in four different sizes, all the containers you will need for the week!   

Makes: 6 Adult portions

Ingredients:

2 tbsp butter or coconut oil
8 tbsp honey/maple syrup
1 tsp vanilla extract
180g porridge oats
120g wholemeal flour
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
35g sunflower seeds
35g pumpkin seeds

 

Method:

  1. Preheat the oven to 180°c and line a baking tray with parchment paper.
  2. Place the butter or coconut oil in a small saucepan over a low heat until melted. Add in the honey or maple syrup and vanilla extract. Stir over a low heat until combined, then remove from the heat.
  3. Combine all of the dry ingredients in a large bowl.
  4. Stir in the wet ingredients and mix so that all of the dry ingredients are well coated.
  5. Bake in the oven for 15-20 minutes, until golden brown. Remove from the oven and allow to cool fully before storing in an airtight container.
