Makes: 8 x Mini Pies
Cook Time: 50 minutes
Ingredients :
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
3 carrots, chopped
3 potatoes, peeled and cubed
2 celery sticks, chopped
150g (5 oz) frozen peas
600ml (2 ½ cups) low-salt
vegetable stock
Salt* and pepper, to taste
2 tsp oregano
1 tsp ground cumin
Juice of 1 lemon
2-3 sheets puff pastry
1 egg, whisked
*Omit salt for baby
Method:
- Preheat oven to 200°C (392°F).
- In a medium pot, add the oil, onion and garlic and cook for 2-3 minutes. Then add the remaining ingredients (except the puff pastry and the egg) and stir well.
- Bring to the boil and allow to simmer for about 15-20 minutes, stirring occasionally, or until the vegetables are nice and tender.
- Use your individual pie dishes as a guide to cut circles of pastry to cover your pies. Cut a small cross in the middle of each top to allow steam to escape. Divide the filling across your pie dishes and then top with the pastry lids.
- Brush the top of the pies with the whisked egg. Bake for 25-30 minutes until the pastry is golden brown.
For Baby 6 months+
Serve the pie to your baby when they manage finger food and some texture. Make sure the pie is cooled down before serving.
