This Basil and Courgette Pesto is a great way of getting your kids to eat one of their five a day. Bursting with a fresh tasty flavour, this recipe is a delicious twist on our Homemade Basil Pesto. Who knew adding courgettes would result in such a creamy, flavourful sauce? Swirl it into pasta for a quick and healthy lunchtime meal your kids will love.
This pesto is also perfect for batch cooking. Make a big batch and store in our 2oz pot ready to be used with pasta dishes, sandwiches or even fish or chicken.

Makes: 4 Adult Portions
Ingredients
1 courgette
2 handfuls of basil
1 clove of garlic
40g pine nuts
Juice from half a lemon
50g parmesan
2 tbsp olive oil
Pepper to taste
Method
- In a frying pan over a medium heat, lightly toast the pine nuts. Remove from heat and let cool.
- Roughly chop the courgette. Add the courgette, basil, garlic, pine nuts, lemon and Parmesan cheese to a food processor. Pulse until a loose paste forms.
- Add in the olive oil while the blender is running and pulse until everything is combined.
- Season to taste and serve.
Weaning and Storage
6 months+ - Use as a dip for finger foods such as chopped vegetables or pasta.
